my grandma's mac 'n cheese


ingredients:
  • 1/2 lb macaroni
  • 2 tbsp butter
  • 2 tbsp cornstarch
  • 2 cups milk
  • pepper, salt, and nutmeg to taste
  • ~ .6 lb gruyere cheese
  • a handful of grated swiss cheese (optional)
  • plain breadcrumbs
instructions:
  1. start the macaroni boiling.
  2. in small pot, melt the butter and add cornstarch.
  3. stirring until absorbed.
  4. add milk.
  5. stir constantly until it begins to boil, and thickens.
  6. add pepper, salt, and nutmeg to taste.
  7. add sauce to drained macaroni, and pour into an 8"x8" glass pan.
  8. sprinkle a thin layer breadcrumbs on top.
  9. sprinkle a thin layer of the cheese.
  10. now another thin layer of breadcrumbs.
  11. and the rest of the cheese.
  12. cook at 350 for about 15-20 minutes.
  13. then broil until brown and crusty on top.
