this is just amazing pumpkin pie AND it's vegan.
ingredients:
- 1 lb silken tofu
- 1 16 oz. can pumpkin puree
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 1 tsp vanilla extract
- 3/4 cup brown sugar
- 1/4 tsp ground cloves
- 1/3 cup vegetable oil
- 5 tblsp coarsely chopped candied ginger
- 1 tsp ground ginger (optional - see below)
- prebaked pie crust
instructions:
- preheat oven to 350.
- combine all the ingredients, but ginger in a blender and
process until smooth (about 3 minutes).
- add 3 tbsps candied ginger (or ground ginger) and process 30 secs.
- pour filling into a prebaked crust and bake 1 hour.
- garnish with remaining chopped candied ginger.
