vegan pumpkin pie

this is just amazing pumpkin pie AND it's vegan.


ingredients:
  • 1 lb silken tofu
  • 1 16 oz. can pumpkin puree
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 3/4 cup brown sugar
  • 1/4 tsp ground cloves
  • 1/3 cup vegetable oil
  • 5 tblsp coarsely chopped candied ginger
  • 1 tsp ground ginger (optional - see below)
  • prebaked pie crust
instructions:
  1. preheat oven to 350.
  2. combine all the ingredients, but ginger in a blender and process until smooth (about 3 minutes).
  3. add 3 tbsps candied ginger (or ground ginger) and process 30 secs.
  4. pour filling into a prebaked crust and bake 1 hour.
  5. garnish with remaining chopped candied ginger.
